Don Timoteo, a native of Chimayó and the patriarch of the restaurant, wants his guests to experience food that is prepared as it was in his grandparent's kitchen. "At Casa Chimayo we continue to give thanks and celebrate the food, customs and traditions that were handed down from our ancestors.”
Chef Guisela De la Cruz, from Zacatecas, Mexico, pays homage to the deep roots that New Mexican cuisine shares with Mexico and Spain. The ancient ones are honored with every dish served at Casa Chimayo. Chef Guisela uses locally sourced beef, lamb, corn and other ingredients to great advantage so that guests may experience the history and culture of Nueva España in every bite. Most of all Don Timoteo, and staff, wish for every guest to have a truly genuine and authentic experience; one that will be remembered with fondness for a very long time!
